Short Session Delivered at Coventry University Minimum students: 5
Students will take part in the identification of various commonly eaten and “emerging”/exotic foods. The nutritional quality of these foods will be evaluated and compared to recommended daily intake based on UK dietary guidelines. Students will also have the opportunity analyse foods that are formulated with the aim of preventing diet-related diseases. The technological challenges that are related to the designing of such foods in terms of the sensorial and textural properties will be discussed.
